Plateau State sits above the rest of Nigeria — literally. At over 1,200 metres above sea level, its climate is unlike anywhere else in the country. The cool air shapes what grows, how it tastes, and how it is cooked.
The people of the plateau — the Berom, the Ngas, the Mwaghavul and dozens of other communities — have built a cuisine of quiet sophistication around their unique environment. Smoked guinea fowl. Stone-ground tuwo. Fermented locust beans slow-cooked into sauces that carry the memory of the land.
Our last table before a pause. Twenty-five guests. Seven courses. One night in Abuja that tasted unmistakably of the highlands. Sold out in days, cherished for much longer.
